The Story

"In the 1950s my grandmother set aside this park-like space next to our house in Mareuil-sur-Aÿ with vines, flowers and fruit trees, for our enjoyment. Realising this outstanding terroir's potential, my family decided to plant the first Pinot Noir vines here in 1964. We tried using the Pinot Noir to make white wine in small Burgundy barrels: an outstanding champagne was about to be born. After several years of painstakingly tending the vines, the 1995 harvest, the first year of this unique cuvée, was remarkable. We called it Le Clos Saint-Hilaire after the patron saint of the church in Mareuil-sur-Aÿ. No more than 3,500 to 7,500 bottles are produced each year and each is individually numbered."

The one-hectare Clos Saint-Hilaire meets the strictest guidelines: a single enclosed, contiguous parcel with complete winemaking facilities on site. The terroir's magic combined with the wine maker's skills make this wine exceptional. 
Made only from Pinot Noir vinified in casks, it develops an outstanding purity. Billecart-Salmon decided to add very little liqueur, or dosage, after disgorgement in order to let the typicality of the single grape used to make this great wine evolve.

The Clos Saint-Hilaire is a single parcel where the vines, soil and subsoil are carefully tended with respect for the environment. Several years ago, BILLECART-SALMON decided to return to ancestral champagne-making methods in the Clos Saint-Hilaire by using work horses.

This method of maintaining the soil and tending the vines increases porosity and biodiversity: the roots grow deep and the minerals they draw from the soil foster the growth of smaller, more concentrated grapes, revealing the terroir's typical flavour.

This Blanc de Noirs cuvée is vinified in oak casks, allowing the richness of the terroir and the purity of the wine to express itself. For each vintage, there is a limited release of between 3,500 to 6,500 individually numbered bottles, reserved for those very special moments.

"The Clos Saint-Hilaire is a cuvee that I love. Everyone knows it is very unusual. Just because something is unusual it doesn’t always mean it is majestic but it definitely does in this case. It’s a cuvée which has amazed me with its finely roasted nuances, buttery hints of wood and honey and an ample richness. This unique taste is one I’ve never found anywhere else. In terms of pairings, I would propose a soupions stir fry with roasted ceps, dried fruits, Solliès figs and a blackberry vinaigrette! The ceps reflect the woody aromas and the chestnut aspects that are present. The ceps are also a reminder of the rare characteristics of this cuvee which has been entirely vinified in oak. For me, autumn is the best time to taste this wine, when you start to see the very first leaves in the autumnal colours. I project myself into a world which is fixed in nature, close to a forest or a pond, to fully make the most of the aromas of this exceptional and truly invigorating champagne." A cold winter and a mild late spring cued for a perfect June allowing early and fast flowering. Outstanding weather conditions prevailed and the season went on without dramatic turns. Rains in August raised concerns regarding gray rot, but finally sunshine and dry conditions throughout September resulted in an abundant crop of largely healthy fruit (11,930 kg/ha). Dehydration due to wind further aided in achieving perfect ripeness and additional concentration. This, and the cool nights, helped in retaining fresh acidity and, despite the ripeness (10.3% potential alcohol), the wines did not suffer from heaviness or a lack of life. A near-perfect vintage, which produced balanced Champagnes consistently around the region. The best show an impeccable combination of freshness, power, structure and finesse. However, some have matured aromatically quicker than expected and are already past their peak. 2002 produced an abundance of spectacular champagnes, such as Dom Pérignon (the entire range), Krug Vintage and Clos du Mesnil, Piper-Heidsieck Rare, Louis Roederer Cristal and Cristal Rosé, Ruinart Dom Ruinart and Dom Ruinart Rosé, Salon Le Mesnil and Taittinger Comtes de Champagne, to name a few.

A great year. 11% natural alcohol, late-ish harvest. Dosage is 1 g/litre. 3774 bottles. ‘We saw a step up in the Clos standing in the market with 2002,’ says Matthieu. Nuts, honey, spice and cherries, as well as some crystalline citrus fruit on the nose. Powerful and structured with a real vinosity, showing a balance between citrus and apple fruit with the savoury nut and toast characters. Lovely intensity and depth with power and presence, and good acidity. Very fine showing great intensity, a touch of marzipan, and a fine toasty, slightly sweet flourish on the finish, which just goes on and on. 98/100

The 2002 Le Clos Saint-Hilaire is rich, unctuous and exuberant, but it also needs time to be at its best. I have seen that with previous releases, and have no doubt that will be the case here as well. At nearly twenty years of age, the 2002 remains very young. To be sure, the low dosage of 1 gram per liter adds to a feeling of austerity that suggests the wine requires further cellaring. Ash, graphite, menthol and mineral notes complement a core of rich Pinot fruit nicely.

It is easy and fast to use, and I am happy to guide you through it.


1. Start by Signing up and creating your profile

- Add a profile picture and more information about yourselves


2. Next, Create your personal Wine World

- Click iFollow (Discover) from the top menu

- Tastingbook has added automatically into your wine world 5-10 of the most active professionals or Pro's as we call them.

- Search for more pros or other users by typing their name in the search field. Then click into my world to those who you want to include in your wine world. This way, you may be notified when they taste wines or comment on them.

- You can also add wines and wine producers into your wine world. This allows you to access the most up-to-date information about them.


3. Invite your friends to join the tastingbook

- Click your username on the top menu and choose invite

- Type your friends email addresses and click send invites

- You can follow the status of your invitation on the same page


4. Create a tasting and do tasting notes

4.1. Click the New tasting button from the top menu.

- Name the tasting as you wish.

- Set the place and time (You can also add your past tasting notes by just changing the date)

- Click the add new wine button on the right to add new wines to the tasting.

- Now go to the box that says 'Click to add the wine'.

- Start by typing the wine or producer name and select the wine from the list that appears.

- After you have selected the wine, the vintage selection will be opened automatically

- Select the correct vintage by clicking on it.


4.2. Next, click My tasting note box and the worlds most advanced tasting

- From the bottom left of the tasting tool you can select in which language you want to use and view tasting notes.

- just do your wine note by clicking the correct adjectives. The adjectives can be activated by clicking once, or de-activated by clicking again.

- Tastingbook Pros will teach you while you taste wines.

At the bottom of the page in the section Show notes of, you may view notes of the professionals by clicking Pro's. If any of the tastingbook pros have tasted the wine before their opinion will show in the gold colored frames around the adjectives on the tasting view.


4.3. After you have completed your wine note, it's time to give Tb points.

Click the box on the bottom right Give points.
In case you want to add any comment or personal thoughts related to this wine, you may tick the note box next to the scores. In this field you may add copy-pasted texts for instance your old notes, etc.


4.4. After you've completed your notes for all the wines, click Close tasting.

You may now share some general thoughts about the tasting or tasted wines and choose with whom you want share your tasting. Set the Tasting privacy to limit the audience who are able to view your tastings information. We suggest you use Everyone as most of the wine experiences are meant to be shared.

Note:

If a wine that you are tasting is not found in our database, please be kind enough to send us an email to: addwine@thetastingbook.com, please include at least the wine name and producer. We will add the wine in tastingbook within 24 hours.


5. Tastingbook is full of information and stories - how to find them.

Tastingbook is full of information about wines, vintages, and wineries and also has over 30.000 pictures of wines. To best way to find what you are looking for is to browse the site from the Browse field in the top right corner.

You may search for wine, vintage, producer, pros or other community members by typing the name in the browse field. You may then choose from the drop down menu.



If you have any difficulty in navigating the site you may easily get help by clicking the support button on the left side of the page
