Up to this point 1996 has been considered a fantastic vintage which produced classic wines; the best since 1990. A long, dry summer produced grapes of record ripeness with record acidity. Some, including myself, question how the 1996s are aging. Billecart-Salmon is one of the constantly rising and growing stars in Champagne. The purity and intensity of its wines has much to do with the double settling of the must and a particularly cool fermentation temperature (13 °C). Partial oak fermentation of the vintage wines brings complexity and a smooth silky texture. Therefore it is no surprise that the magnificently ripe, fruity yet acidic vintage 1996 also produced a great Cuvée Elisabeth Salmon Rosé.
Since its first vintage 1988,this Rosé has consistently been one of the best in Champagne. It is made of an equal blend of Chardonnay and Pinot Noir with an addition of Mareuil-sur-Aÿ red Pinot Noir.
Intense and medium deep salmon rose colour. Delicate nose with red fruit of cherries and raspberries with a dash of citrus. Very delicate and balanced taste with delightful elegant acidity, great density and rich creamy mousse. Harmonious wine with opulence and finesse. Without a doubt one of the best roses of the vintage.
