The Story

The first time I had the opportunity to taste the Brut Rosé cuvée, and it was a long time ago now, was at the restaurant of Alain Passard. What I liked straight away was the vinous dimension of this cuvée. You can sense that behind the champagne there is a real wine there. Next it begins to unveil itself more intimately, with notes of citrus fruits and red berries which are more subtle and elegant. This cuvée showcases the mastery and knowledge of balance. It’s this subtle delicateness, born from harmony and finesse which I like in the Brut Rosé. For me, this champagne is an ideal partner to accompany the desserts that I create. I’m thinking about a lemon, strawberry and olive oil gateau, where the notes of the wine are in perfect harmony with the fruit. I also have on my menu an entirely lemon dessert which pairs perfectly with this cuvée and its citrus personality! For me, this champagne can be drunk at any point, breakfast lunch or dinner. At any time, it’s like a ray of sunlight that transcends the beauty of the moment.

A Romantic champagne
The production secrets and the vinification method of this cuvée go back to the origins of the House of BILLECART-SALMON and have been handed down for seven generations. The Brut Rosé is a blend of Chardonnay, Pinot Meunier and Pinot Noir vinified as red wine.

Appearance: Its pale and bright pink colour is adorned with warm glints of gold and its delicate slowly rising bubbles give it a persistent mousse.

Aroma: This cuvée unveils a subtle aroma leading to an elegant, delicate bouquet of fine notes of red fruits and zest of citrus fruits.

Palate: Its special method of vinification gives this cuvée a light, elegant flavour, followed by a fresh finish with a taste of raspberry.

Serving: This rosé champagne is an ideal partner as an aperitif and can also accompany a dish of wild salmon or sushi. For dessert, it will add a sublime touch to red fruit flavours.

My favorite non-vintage rosé Champagne on the market, slightly pink color and very elegant with fine perlage. Lovely fresh red fruits flavor such as strawberry and raspberry. Delicate with a remarkable finesse thanks to a good acidity makes it delightful to drink as an aperitif but also fun to drink with food

(40% Chardonnay, 30% Pinot Meunier, 30% Pinot Noir). One of the most famous rosé’s in Champagne, but as I fail to see the added value of rosé Champagne in general this wine does not impress me either. Other then that it is pure, elegant and well-balanced.

Inside Information

In 1818, Nicolas Francois Billecart and Elisabeth Salmon founded a Champagne house in Mareuil-sur-AØ that is still family owned and operated by their descendants nearly 200 years later. The estate-grown grapes total 100 hectares, while those used in production (of 220 hectares) are sourced from 40 crus in the Champagne region. The grapes for BillecartÕs most prestigious cuvee, however, are hidden away in a small garden plot next to the family home in Mareuil-sur-AØ. The Clos Saint-Hilaire, named after the patron saint of the regionÕs church, measures just one hectare of Pinot Noir planted in 1968. Today, the 6th generation, Francois and Antoine Roland are at the helm of the house, supported by Denis BlŽe, Vineyard Director. BlŽe knows the vineyards well; heÕs been their keeper for the past twenty years. Using draught horses to till the vineyard, he promotes deep, minerally enriched roots that produce small, concentrated berries. This method also assists to promote biodiversity in the vineyard, which has allowed the winery to do away with herbicides.
