A good expression of grower Champagne elegance, Cœur de Cuvée is produced exclusively from 50+ year-old vines in the Premier Cru village of Rilly-la-Montagne (typically 80% Chardonnay and 20% Pinot Noir). Sourced solely from the heart of the first pressing, vinified and aged in 228-liter oak barrels for 10 months, and cellared for over six years, this cuvée bridges the gap between Burgundy complexity and Champagne freshness.
The nose is opulent, noble, and breathtakingly multidimensional, opening with yellow peach, candied lemon, and pear tart, closely followed by exquisitely integrated oak nuances of toasted brioche, fresh butter, roasted macadamia, acacia honey, and a strong line of crushed chalk. On the palate, the wine possesses extraordinary textural weight and a micro-fine, lace-like mousse. A dense, concentrated core of stone fruit and citrus oil fills the mid-palate, held in magnificent tension by a sharp, mouthwatering spine of acidity that keeps the oak richness completely weightless. It finishes with immense length, bone-dry, savory, and deeply mineral, leaving a lasting trail of grapefruit zest, subtle spice, and saline chalkiness.
