The blend is 80% Chardonnay from Grand Cru vineyards, with 75% coming from the Côte des Blancs (Avize, Chouilly, LeMesnil-sur-Oger, and Oger) and 25% from the Montagne de Reims (Sillery and Verzenay); ther emaining 20% is composed of Pinot Noir made into red wine, from the only Grand Cru vineyardin Aÿ.

2007 is an extraordinary vintage, and one of the very few in Champagne when the harvest began in August. After a sunny and very warm spring, the months of June, July and August brought rather gloomy weather and heavy rainfall. And yet these cool temperatures did nothing to counteract the vineyard's early and rapid progress, with the grapes quickly reaching full ripeness.

An unusually warm spring led to early flowering and initial optimism, which soon gave way to disappointment following one of the murkiest summers on record. Overall, 2007 was a difficult vintage saved by last-minute sunshine in late-August. Mildew and rot were the main culprits of the harvest, and the level of gluconic acid rocketed. “The 2007 was chef de cave Frédéric Panaïotis’ first go at this iconic cuvée and despite the vintage’s challenges for Pinot Noir he truly mastered it. The evolving colour has copper hues and the complex nose also shows fine, maturing Pinot notes. Alongside the usual apricot and spice aromas, the wine comes with a stylish gunpowdery toastiness, vanilla and layered melange of citrus fruit ranging from candied mandarin to orange peel. On the light-weight and beautifully energetic palate the Chardonnay body is evident and the wine comes across as a particularly elegant Dom Ruinart Rosé.”
The 2007 Dom Ruinart Rosé is fabulous. The Rosé has all of the energy of the Blanc, with the extra richness that comes from the Pinot in the blend. Rose petal, mint, blood orange and cinnamon are some of the many aromas and flavors that are laced throughout. There is a feeling of translucence in the Rosé that is impossible to miss. I would cellar it for a few years. This is another magnificent wine from Chef de Caves Frédéric Panaïotis in his first vintage at Ruinart. Disgorged: February, 2018.
Light, moderately intense copper rose colour. Complex, intense, toasty nose with strawberries and ripe red fruits. Dry, intense, rich and compelx with dense fruity texture. Refined mousse, harmonious and balance. Benefits from 20 minutes decanting. Perfect match with Lemon and Rosemary flavoured Grilled Quails with green lentils and bacon. JL 91p (17/9/2020)
