The Story
The blend is 80% Chardonnay from Grand Cru vineyards, with 75% coming from the Côte des Blancs (Avize, Chouilly, LeMesnil-sur-Oger, and Oger) and 25% from the Montagne de Reims (Sillery and Verzenay); ther emaining 20% is composed of Pinot Noir made into red wine, from the only Grand Cru vineyardin Aÿ.

Wine Information
2007 is an extraordinary vintage, and one of the very few in Champagne when the harvest began in August. After a sunny and very warm spring, the months of June, July and August brought rather gloomy weather and heavy rainfall. And yet these cool temperatures did nothing to counteract the vineyard's early and rapid progress, with the grapes quickly reaching full ripeness.
Dom Ruinart Rosé 2007 has a deep pink colour with delicate copper glints.
The nose immediately expresses a warm, sunny aroma, edged with roasted notes of coffee and cocoa bean, and mingled with toffee apple and ripe citrus (tangerine, blood orange, kumquat).
On the palate, damson and hibiscus aromas are enhanced with pronounced ripe citrus notes, including blood orange, which echo its olfactory character. The honest and precise impact of the 2007 vintage is impressive on the palate. It brings hints of treesap, with wonderful freshness on the finish.
Dom Ruinart Rosé 2007 is beautifully sculpted and lively. Its low dosage under scores the harmony and complexity of the fine wines that have been blended to produce this cuvée.
Dom Ruinart Rosé 2007 is perfect to serve with both seafood dishes (salmon tataki, marinated tuna) and meat (Bresse poultry, veal).
A few more years of aging will intensify the wine, and it could be paired with the same ingredients but will express more intense, smokier and spicier notes.
Vintage 2007
An unusually warm spring led to early flowering and initial optimism, which soon gave way to disappointment following one of the murkiest summers on record. Overall, 2007 was a difficult vintage saved by last-minute sunshine in late-August. Mildew and rot were the main culprits of the harvest, and the level of gluconic acid rocketed. The harvest began early, on August 24th, and was abundant in volume averaging 14,242 kg/ha. Pinot Meunier posed the biggest problems and Chardonnay clearly outperformed the rest. Many of the iconic prestige cuvée blanc de blancs were successfully produced, such as Taittinger Comtes de Champagne, Ruinart Dom Ruinart, Billecart-Salmon Cuvée Louis and Salon Le Mesnil. Some blended prestige cuvées such as Louis Roederer Cristal and Philipponnat Clos des Goisses were also made. Champagnes from 2007 are typically high in acidity and restrainedly classic in style, but lack the spine and strength of the greatest harvest years. Even if the vintage only receives three stars, its best Chardonnays are well worth seeking and storing.
