Pouring a lovely pale pink with subtle copper highlights, the mousse is remarkably creamy, fine-grained, and energetic.
The nose is deep, wonderfully expressive, and highly gastronomic. Vibrant top notes of fresh raspberries, macerated strawberries, and redcurrant gelée are grounded by serious autolytic complexity. With minimal aeration, the bouquet broadens to showcase enticing secondary markers of freshly baked brioche, toasted almonds, cardamom spice, and a very elegant hint of orange blossom water. [1]
The palate is a striking revelation of volume, balance, and poise. It possesses a medium-to-full-bodied presence that floods the mouth with layers of juicy red orchard fruits and limes. The underlying low dosage lets the magnificent, intense chalky minerality of the Grand Cru terroirs ring out loudly, generating an immaculate, vertical tension. Crisp, clean, and perfectly balanced, the wine flows with superb velocity into a long, persistent, and refreshing finish marked by a bitter-tonic twist of pink grapefruit peel and sea salt.
