The Story

Blend: 75% Pinot Noir, 20% Chardonnay, 5% Pinot Meunier.

Winemaking: First press juice of mainly Grand and Premier Crus grapes from the heart of the Champagne wine-growing area. Reserve wines (25 to 30% of the blend) are aged in wooden barrels using the solera system to incorporate older wines without losing freshness.

Vinified using traditional methods to avoid premature oxidation. Partial malolactic fermentation and some of the wines aged in casks to allow the aromas to develop complexity. Still red wine made from Pinot Noir grapes from Mareuil-sur-Ay and Riceys is obtained by maceration and 7 to 8% is added to obtain a delicately coloured rosé with a very definite fruity taste. Moderate brut dosage (9 g/litre) to maintain a balance between freshness, fruitiness and vinosity without masking the wine’s character and purity.

Aging: Aged on the lees in the House’s cellars at a constant temperature of 12°C for three years, far longer than the legal minimum requirement of 15 months.

Tasting:  Salmon pink in colour with coppery glints. Delicate, creamy and lingering froth. The first nose reveals summer berries with notes of cherry and wild strawberry. Notes of citrus and grapefruit peel develop with time. The attack on palate is elegant and pure. Full and ample on the palate, with good acidity and a light astringency that brings out the fruitiness.

Food: As an aperitif, served chilled but not ice-cold (9°C). Enhances smoked fish and meats (ham, bacon) or pink meat (veal, lamb). An ideal complement to summer berry desserts, either served plain or as a soup. storing To be enjoyed young to appreciate its full fruitiness. Royale Réserve Rosé will also age magnificently for several years thanks to the expertise employed in blending it.

Inside knowledge : The red Champagne wine which is used to craft Royale Réserve Rosé is produced from grapes grown in the Mareuil-sur-Ay terroir, one of the Philipponnat family’s historic crus and the village where the House’s headquarters are now established.

Wine Information

Réserve Rosée is true to the tradition of style at the House of Philipponnat where taste takes precedence over colour, combining intensity, freshness, and elegance.

A non-vintage wine like the Royale Réserve, Réserve Rosée abides by the historic tradition of style at the House of Philipponnat. The majority of the blend comprises the rich and powerful grapes from the beautiful vineyards of Montagne de Reims in Ay and Mareuil-sur-Ay and its three year ageing process gives it a pleasant complexity without taking anything away from its freshness.


Blend:
Pure cuvée of Pinot Noir (70%), of Chardonnay (25%) and Pinot Meunier (5%). The colour comes from 7 to 8% of red Pinot Noir grapes from our own vineyards, generally from Clos des Goisses, at Mareuil-sur-Aÿ. Reserve wines: 20 to 35%, these are blended again every year in a "Solera" fashion in order to incorporate older wines without loosing freshness.

Wine making:
Traditional. Malolactic fermentation is systematically sought after, except for a fraction of wines which are fermented in wooden casks. The red Pinot Noir is made from "free-run" juice, macerated for 12 to 14 days and used in light proportions (7 to 8 %) in order to obtain a delicately colored rosé, but one with character and distinctive taste. The dosage is kept small (9 grams/litre) in order to preserve a harmonious balance of dryness, freshness and fruitiness.

Ageing:
Around 3 years on the yeast, much longer than the 15 months legal minimum. All wines are given three months between disgorgement and shipping. Each bottle bears its disgorgement date on its back label.

Wine & Food Pairing:
An ideal match for smoked fish, smoked meats (ham, bacon…), pâtés and pink meats (veal, lamb). With desserts, one should avoid very sweet recipes, favoring simple red berries, served either alone or in soups. It is also lovely as an aperitif or on its own.
