Vintage 2000

A warm and wet winter was followed by an equally wet spring. First, in May, came the seri- ous heat, which gave a fast owering around June 14. Chlorosis and mold growth were evi- dent. June and August were hot and dry. But if you were like me, and tried to have a July vaca- tion in Champagne that year, you noticed how cold and rainy it was. The weather was almost as bad as at home, with constant rain and local hailstorms.

Written Notes

Medium deep golden colour with tiny fine bubbles. Mature and complex nose with a fine toastiness, no oak but rather maturity/lees contact with notes of nougat, hazelnut, ripe fruit like pear, apricot, citrus comfit and some chalky notes. The palate has good grip and weight, medium to full with high flavour intensity a silky creaminess, fresh backbone with rounded acidity, sweet citrus, ripe stone fruit layered with nougat, nuts and brioche. Good harmony, depth and a long intense finish.

The stylish and withdrawn nose is a fine melange of sea breeze, freshly ground coffee, herbs, baked apple and grilled almonds. The plush texture is beautifully complemented by the wine’s linearity and freshness. Beautifully complete

Golden colour. Mature nose with aroma reminiscent of walnuts, dried apricots, candied Mirabelle, hints of undergrowth, balmy spiciness, vanilla, brioche, Bergamot and slightly smoked hints. On the palate opulent and densely woven, quoting the flavour of the nose, powerful yet elegant with great depth and length.

The 2000 Dom Pérignon P2 is decidedly exuberant. Ripe apricot, orange peel, pastry, baked apple, butter and vanillin all flesh out in this beautifully resonant, toasty edition of the P2. Soft curves and voluptuous fruit add to the wine’s immediacy and sheer appeal. The 2000 is not hugely complex or layered, but it has plenty of palate presence and overall intensity. The 2000 P2 is a terrific choice for readers who enjoy Champagnes that show the more advanced aromas, flavors and textures that develop in bottle. Tasted two times with consistent notes.

A Champagne that has turned to a very fine texture with dried pineapple and lemon character. Medium to full body, complex and flavorful palate. Shows length and beauty. Pie crust, cooked apple and lemon rind continue on the finish. A truly great 2000 with a combination of finesse and strength. It’s very, very minerally to a point of sea salt. It was disgorged in first half of 2016.

When Dom Pérignon Vintage 2000 was released, I knew it was a classic: complete, tactile, balanced. These obvious traits were in fact hiding an elusive depth, an ambivalent character. Austere yet seductive, precise yet caressing, the wine was ever-changing and evolving—much as the year 2000 and its weather marked by alternating episodes of cold and warmth.

 

17 years later, as I taste Dom Pérignon P2 2000, I think to myself: “this is what the plénitudes are all about.” I confront the wine in my glass with the one in my memories, and I can’t help but notice that the wine has grown: its facets are better delineated, its edges sharper, the global impression more accomplished. This is the magic of the maturation on the lees, in our cellars: the balance of Dom Pérignon Vintage 2000 has expanded into the insolent coherence of Dom Pérignon P2 2000.
