The 1975 Dom Pérignon vintage reflects a year of generally favorable weather, although the growing season began with a cold spring, resulting in a notably late budbreak. Flowering, however, occurred under near-perfect conditions, setting the stage for a promising harvest. The summer was hot and sunny, interrupted only by a few storms in August, and the harvest commenced on September 29 under good weather, though conditions deteriorated quickly thereafter.

On the nose, the 1975 Dom Pérignon presents a rich bouquet of ripe orchard fruits, such as golden apple and pear, layered with subtle notes of dried apricot and a touch of honey. These fruity aromas are complemented by more mature scents of toasted brioche, almond, and a hint of smoke, adding depth and complexity.

The palate is generous and well-structured, with a creamy texture balanced by a lively acidity. Flavors of baked apple, citrus zest, and hazelnut unfold, supported by a characteristic minerality that reflects the terroir. The wine’s age has imparted a subtle oxidative quality, which enhances its depth while maintaining an impressive freshness.

The finish is long and elegant, with lingering notes of toasty brioche, citrus peel, and a fine chalky minerality. Despite the challenges posed by the weather late in the season, the 1975 Dom Pérignon is a beautifully balanced vintage.

We began the evening with a magnum of 1975 Dom Perignon that was super fresh out of the gate, flirtatious and flirting with outstanding.  It was an excellent start to an excellent evening, and while ’75 is not in the same category as many other of the better vintages that surround it, good bottles are quite pleasurable (94M).

A pure Dom Pérignon with everything in its rightful place. Perhaps this wine lacks charm compared to some other vintages, and I go against the grain in preferring the '73. Seams to be a longlived star.

The 1975 Dom Pérignon (Original Release) is fabulous. Rich, explosive and incredibly inviting, the 1975 possesses magnificent depth and pedigree to burn. The very first hints of aromatic nuance are starting to develop in a wine that comes across as remarkably youthful. Over the course of several hours, the 1975 loses some of its intensity, but it remains superb. This is a tremendous showing.

Inside Information

Almost all Champagne is a blend, and Dom Pérignon is no exception, the chef de cave choosing from the very best lots, dictated both by the quality of the wines available and by the cuvée style. Unlike other prestige Champagne producers, Moët’s chef de cave does not want a super-rich style, but seeks aromatic finesse, a silky texture and a honed elegance. Until 1969, the must would have been fermented in wood, but by 1975 it was all fermented in steel tanks. The style has always placed an emphasis on reduction; that is, protection from oxygen and thus from oxygenation, as the cellarmasters want wines that age well. The final blend spends at least six years on the lees before being disgorged.
