Champagne by Richard Juhlin / Normal harvesting and fairly simple wines, light body, and high acidity. Three thousand bottles of 1907 Heidsieck & Co Monopole were on board the Swedish freighter Jönköping when it was sunk by a German submarine
in 1916, which has given us access to large amounts of this wine in the modern era when the cargo was salvaged in 1998. The high acid in combination with the ideal storage condi- tions on the ocean oor has kept the cham- pagne dancing as lightly as a teenager.
