First, WeI advise you to choose a good vintage, an excellent one if your wallet allows. If you taste a poor vintage, you will notice how it raises above most other wines of the same vintage, but you will miss the actual point of Pétrus.

We went forward in time for the next flight, beginning with the youngest wine of the weekend, the 2007 Petrus. This was baby juice by comparison, with grapy, plummy, almost inky fruit that gave a sunny and beachy impression in a California way. The palate was ripe and rich with touches of cinnamon and oatmeal, along with candied fruit and a smooth finish. I wondered whether this wine (and flight in general) reflected that the overall quality of winemaking has gotten better, or just different, and whether that was technology’s blessing, or curse
The 2007 Petrus is certainly one of the over-performers in an otherwise mediocre vintage, although you still have to pay through the nose for a bottle. Served alongside the 2009 and 2010, it has impressive fruit concentration with a mixture of red and black fruit, those traits of black truffle and pain d’épices still evident as displayed on previous bottles. And likewise, the 2007 Petrus does respond to aeration, gaining a little weight and girth in the glass, even if it must lie in the shadow of the 2009 and 2010 (an unfair comparison in many ways). This is probably beginning to drink nicely with 11 years on the clock and should drink well for another fifteen. Tasted blind at a private dinner in Hong Kong.
The 2007 Pétrus reveals a deep hue, with delectable, expressive and pleasantly bursting fresh aromas. The nose exudes fresh currant and pureed raspberry. The swirl brings out a whole new universe with spices, fiery notes coated with black truffles: a distinctive mark of aged Pomerol wines. The palate reveals the same aromas. This offering presents incredible vigor and strength while boasting finesse.
Black red. Incredibly aromatic, sophisticated and incredibly well constructed wine. Huge amounts of dark cherries/blueberries and ripe tannin. The balance was completely breathtaking in this wine, but so was the length on the palate. Still, in my opinion, it's not better than 2005 version.
Ruby. Again this almost Burgundian elegance, blueberries, floral and scented nose. Fresh acidity, ripe tannins, elegant and light texture, not far from 07 La Tâche not long ago, but more intense flavours, very long. More open like last bottle.

The delicious 2007 is the first Petrus in a number of years that can be drunk immediately. Relatively big for the vintage, it offers a dark plum/ruby/purple color as well as aromas of mulberries, black cherries, cedarwood, and soil undertones, loads of fruit, a plump, medium to full-bodied mouthfeel, silky tannins, and low acidity.
