The Story

Bin 707 represents the Penfolds House red wine style at its most rich and powerful. The cabernet fruit is largely drawn from South Australian vineyards in Coonawarra, Padthaway, Barossa Valley – including the famed Block 42 vineyard - and increasingly from Bordertown. Everything about Bin 707 is large scale. Winemakers seek fully ripe fruit with strong flavours derived from partial barrel fermentation and maturation in new American oak hogsheads for a period of 18 months. Bin 707 is immensely concentrated with dark berry/dark chocolate fruit balanced by well-seasoned new oak, plenty of fruit sweetness and strong but not overwhelming tannins. Bin 707 builds up into a wonderfully complex and interesting wine. The 1970-1975, 1981,1995 and 2000 vintages were not made.

Bin 707 is Penfolds' Cabernet Sauvignon version of Grange: ripe,intensely-flavoured fruit; completing fermentation and maturation in new oak; fully expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing.

Named by an ex-Qantas marketer, Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 when fruit was directed to other wines, nor in 1981, 1995, 2000 or 2003 (when fruit of the required style and quality was not available). Fullbodied and with proven cellaring potential, Bin 707 has a secure place among the ranks of Australia's finest Cabernets.

The 1964 Bin 707 Cabernet Sauvignon was Penfolds’ first commercial release of a single cabernet-based wine. Today, Bin 707 is justifiably regarded as one of Australia’s most important cabernets.

The winemaking philosophy and barrel maturation of Bin 707 is almost identical to Grange. The Bin 707 style combines intense varietal definition with new American oak to produce wines of great richness, harmony and concentration.

Over the years the development of Bin 707 Cabernet Sauvignon has mirrored the advances in winemaking and viticulture and in this sense has served as a representation of progress and excellence within the industry.

Bin 707 proudly bears the Penfolds stamp – displaying a fascinatingly complex marriage of ripe, concentrated Cabernet fruit and 100% new American oak, forged together through partial barrel fermentation. It displays dark berried fruit, mocha and chocolate overtones, with warm spice notes.

Bin 707 is a medium to long term cellaring style of wine. It will comfortably gain stature and complexity across more than two decades in the bottle.

Written Notes

One of our most important cabernets, and surely the most expensive? Does it top the best from the west? Talking about it with Peter Gago, he mentioned that “it is not the most varietal cabernet around but it is not meant to be”. It is a multi-regional blend (first appearing with the 1964 vintage) so we can rule out 'terroir', but ruling out varietal character? Interesting – it just simply leaves flavour and the wine itself. Does it hold up? If not, that is a lot of dosh. This vintage is 48% Coonawarra, 26% Barossa, 21% Wrattonbully, 3% Padthaway and 2% Adelaide Hills, picked just after the heatwave commenced, but old vineyards like Block 42 in the Barossa (reputedly the world's oldest cabernet from the 1880's) need a little longer to ripen. It enjoys 100% new American oak. It is a big, bold, ripe style, lots of spices and some oak that is noticeable but not at all aggressive. It does need time to show at its best. A lovely plush, seamless cab. Sure, it isn't classically varietal but it is still seriously good. Fine tannins. A cuddly cabernet and even though it is more approachable than many might be at this stage, it would be wise to cellar it for a period.
