The Story

Bin 707 represents the Penfolds House red wine style at its most rich and powerful. The cabernet fruit is largely drawn from South Australian vineyards in Coonawarra, Padthaway, Barossa Valley – including the famed Block 42 vineyard - and increasingly from Bordertown. Everything about Bin 707 is large scale. Winemakers seek fully ripe fruit with strong flavours derived from partial barrel fermentation and maturation in new American oak hogsheads for a period of 18 months. Bin 707 is immensely concentrated with dark berry/dark chocolate fruit balanced by well-seasoned new oak, plenty of fruit sweetness and strong but not overwhelming tannins. Bin 707 builds up into a wonderfully complex and interesting wine. The 1970-1975, 1981,1995 and 2000 vintages were not made.

Aged in American oak, the 2016 Cabernet Sauvignon Bin 707 stands out for its bold aromas of vanilla, tobacco and cassis. This year, it's close to 40% each from Coonawarra and McLaren Vale, with smaller proportions from Barossa Valley and the Adelaide Hills. It's full-bodied and rich, with a velvety mouthfeel, great intensity and super length. Yes, it's embryonic, but it's not unapproachable, much like any other high-quality New World Cabernet these days, with the ability to age for two decades or more. Drink 2020-2040.

A sweet nose. The oak is so boisterous right now – 20 months in new American hogsheads. This needs time to absorb and come together. Built for power, not speed. Powerful and structured. This is by no means made every years. Since 1964, it has skipped 10 vintages due to unfavourable conditions – this is made only in the best vintages, and made for the long haul. Older 707’s have been beguiling and luxurious, so I can only assume that this will be exactly the same in time.

A powerful and deeply ripened 707 whose rather jammy bouquet of cassis, blackberries, cranberries and assertive chocolate/cedar oak reveals nuances of blueberries and a faint meatiness. Its long, voluptuous palate of fiery black and red fruits, baked earth and suggestions of roasting tray juices is handsomely oaked and supported by a firm, grippy and astringent spine of mouthcoating tannins. It’s just a shade too overcooked – with telltale notes of currants and figs – for a higher rating.
