The Story

Bin 707 represents the Penfolds House red wine style at its most rich and powerful. The cabernet fruit is largely drawn from South Australian vineyards in Coonawarra, Padthaway, Barossa Valley – including the famed Block 42 vineyard - and increasingly from Bordertown. Everything about Bin 707 is large scale. Winemakers seek fully ripe fruit with strong flavours derived from partial barrel fermentation and maturation in new American oak hogsheads for a period of 18 months. Bin 707 is immensely concentrated with dark berry/dark chocolate fruit balanced by well-seasoned new oak, plenty of fruit sweetness and strong but not overwhelming tannins. Bin 707 builds up into a wonderfully complex and interesting wine. The 1970-1975, 1981,1995 and 2000 vintages were not made.

Written Notes

Deep, saturated ruby. Displays expansive aromas of dark berry liqueur, cherry-cola, cured tobacco, cedary oak and mocha, along with licorice and floral topnotes. Chewy, broad and appealingly sweet, offering blackcurrant, bitter cherry, coconut and savory herb flavors that show outstanding depth and energy. The cherry and floral notes resonate on a wonderfully long, youthfully taut and penetrating finish that features mounting tannins and repeating dark fruit and tobacco character. Made in all new American oak.

Deep crimson. Classic blackcurrant mulberry aromas with roasted chestnut, graphite notes. Ample, yet elemental and multi-layered with plentiful pure blackcurrant mulberry fruits, fine persistent grainy/ muscular tannins, superb mid-palate richness and underlying mocha roasted chestnut notes. Finishes brambly firm with plenty of cedarwood cassis notes. 
A sturdy Bin 707 with beautiful fruit definition and tannin vigour. Claret lovers rejoice! Seal; Cork, Drink 2028 – 2050 14.5% alc 97 points

There is no doubt at all that the fruit has the power to withstand the barrage of oak, however one does wonder whether this has been slightly overdone. The enduring memory on the palate has been written by OAK. I can understand why one would buy and cellar this, but it lacks a certain amount of restraint for my palate. Its inherent ‘cabernosity’ is obscured by the oak at this stage. Length of flavour exceptional. Billowing.
