The Story

Bin 707 represents the Penfolds House red wine style at its most rich and powerful. The cabernet fruit is largely drawn from South Australian vineyards in Coonawarra, Padthaway, Barossa Valley – including the famed Block 42 vineyard - and increasingly from Bordertown. Everything about Bin 707 is large scale. Winemakers seek fully ripe fruit with strong flavours derived from partial barrel fermentation and maturation in new American oak hogsheads for a period of 18 months. Bin 707 is immensely concentrated with dark berry/dark chocolate fruit balanced by well-seasoned new oak, plenty of fruit sweetness and strong but not overwhelming tannins. Bin 707 builds up into a wonderfully complex and interesting wine. The 1970-1975, 1981,1995 and 2000 vintages were not made.

Vintage 2018

AUSTRALIA: Very promising quality with the most optimistic reviewers declaring 2018 great in every region and for every variety. The more cautious view is that early frosts reduced yields, but that consistent good weather throughout the second half of the growing season actually resulted in great potential.

Barossa 2018 vintage to savor

The 2018 Barossa vintage was completed at the end of April 2018, with growers and winemakers satisfied with a high quality vintage and good yields.

“The flavors and colors of the reds are wonderful, and the natural acids in the Eden Valley whites surprisingly high, with early varieties this year including Riesling, Chardonnay, Shiraz, Grenache and Cabernet,” said Louisa Rose, head of winemaking at Yalumba.

The growing season is off to a good start, with winter 2017 precipitation about 10% above average. However, spring rainfall was only 78% of average in the Barossa Valley (BV) and 98% in the Eden Valley (EV), and December rainfall was only 57%. % of average in BV (88% in EV).

Drier soils, combined with warmer than average days in October and November (October 2ºC above average in VB (1.8ºC in EV) and November 1.1ºC above average in BV (1.6 ºC in EV), allowed the vine canopies to grow quickly, to flower well and to form a good number of clusters.

January and February were hot and dry, with very hot temperatures in February slowing the rate of ripening. January was slightly above average (1.4°C during the day but closer to average at night) and February was about average during the day, but with nighttime temperatures significantly warmer than average. average in the Barossa Valley (5.8°C warmer).

With summer rainfall at 50% of average, growers with access to water, soil moisture monitoring, good irrigation management and healthy soils experienced less stress – and subsequently delivered healthy fruit and consistent yields.

The Indian summer of March and early April was “the icing on the cake”, with average temperatures, without extremes, perfect for ending the vintage. The 28-30mm of rain on April 14-15 did not cause any major problems for picking – and was a welcome post-harvest watering for most Barossa growers.

Overall, in 2018, Barossa Valley crushed 56,970 tonnes*, down 22% from the 2017 vintage, but 9% from the five-year average. In 2018, Eden Valley crushed 11,593 tonnes*, down 3% compared to 2017.

The total Barossa crush of 68,563 tonnes* represented 9% of the total volume and 25% of the total crush value in South Australia.

Average prices for Barossa Valley varieties remained stable in 2018, with Shiraz at $2252 per tonne, down 1% from last year. At Eden Valley, the average price of Shiraz increased by 11% to $2636 per tonne and Cabernet Sauvignon increased by 15% to $2354.

*Wine Australia estimates the response rate for wine grape crush in South Africa to be 85%, so the actual total Barossa crush is estimated at between 75,000 and 80,000 tonnes.

Written Notes

There are not many multi-regional Cabernets which sit at the very pinnacle of the variety, but 707 has always been there. Fruit from McLaren Vale, Coonawarra, Barossa Valley, Wrattonbully, Robe and Adelaide Hills, it sees 18 months in new American oak hogsheads.

Opaque purple colour. The immediate impression, at this very early stage, is that the oak is still dominating, but oak of such quality. Through it soon emerge notes of cedar, blackfruits, chocolate, spices, rich chocolate cake almost verging on suggesting this wine is more like a Cabernet dessert. Focused, balanced and extremely long, this is a cracking Cabernet. A wine for twenty to thirty years. 97.

A day later, even more impressive. Real persistence, serious concentration and yet a wine of even more finesse than it first seemed. 98.

Bin 707 is a perfect Cabernet Sauvignon representation of Penfolds' house style: intensely flavoured fruit; completion of fermentation and maturation in new oak; expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 (when fruit was directed to other wines) nor in 1981, 1995, 2000, 2003, 2011 or 2017 (when fruit of the required style and quality was not available). Full-bodied and with proven cellaring potential. Blend of McLaren Vale, Coonawarra, Barossa Valley, Wrattonbully, Robe and Adelaide Hills fruit. TA 7 g/l, pH 3.5. Aged for 18 months in American oak hogsheads (100% new). A relatively dry winter and spring, coupled with slightly above-average temperatures, indicated an early start to the growing season. A spell of cold weather during budburst slowed vine phenology by approximately 10–14 days but climatic conditions for flowering and fruit-set were optimal in all regions. Summer was warm, with the Barossa Valley, McLaren Vale and Coonawarra all experiencing heat spells greater than 35 °C in January with below-average rainfall. Late flowering and onset of veraison delayed harvest by a few weeks, a pattern also reflected in Wrattonbully and Robe. The Adelaide Hills had a very dry finish to summer and an unseasonably warm autumn, ensuring Cabernet Sauvignon achieved ample ripeness with good levels of flavour and intensity. 'Overall, an exceptional vintage for Cabernet Sauvignon with strong varietal expression across each sourcing region.'
Extremely luscious – particularly in contrast to Bin 169. Like melted blackcurrant pastilles with an overlay of an Australian summer. Great balance and drive but very sumptuous. The fruit is already dominating the tannins – which are notable. Very Penfolds and a success!

(2018; up to AUD $650 from AUD $500 in 2017) is a statuesque wine that is stylistically closer to Napa Valley than Bordeaux. Again, I could enjoy it now, but it would be crazy to open it now if you’re spending that kind of money. As with Grange, it makes no sense to drink them too young. You’d fail to enjoy these wines at their full potential.

Deep crimson. Elegant blackcurrant, black olive, graphite aromas with meaty, vanilla, mocha notes. Supple and well-concentrated with attractive blackcurrant, blackberry fruits, fine graphite/ touch al dente tannins and plentiful mocha, espresso oak notes. Finishes muscular/ chewy /cedary firm and minerally. A very polished wine with lovely fruit density and torque. Seal; Cork, Drink 2028 – 2048 14.5% alc 97 points
