The Story
Variety: Sauvignon Blanc 100%.
Origin: Leyda Valley
Soil: Granite red clay and brown clay with stones. 2 m depth.
Winemaking: Initially, grapes received a cold soaking for a period that went between 12 and 14 hours to transfer greater amount of aromatic compounds from the skin to juice. The juice was protected from air contact during the whole process. Fermentation was carried out slowly, maintaining a constant temperature control (between 12-15ºC), that allowed yeast to extract varietals aromatic compounds. Once alcoholic fermentation was done, the wine stayed on its lees during 3 months, time where lees were stirred (bâtonnage) to maximize contact and increase aromatic and palate complexity.
Tasting notes: Crystal-clear, pale yellow with light green hues. The nose reveals a blend of citrus and tropical fruit, such as limes, grapefruits, pineapples and pears, complemented by floral notes and a hint of minerality. The mouth is elegant, fresh and has well-balanced acidity.
