The Story

Bin 707 represents the Penfolds House red wine style at its most rich and powerful. The cabernet fruit is largely drawn from South Australian vineyards in Coonawarra, Padthaway, Barossa Valley – including the famed Block 42 vineyard - and increasingly from Bordertown. Everything about Bin 707 is large scale. Winemakers seek fully ripe fruit with strong flavours derived from partial barrel fermentation and maturation in new American oak hogsheads for a period of 18 months. Bin 707 is immensely concentrated with dark berry/dark chocolate fruit balanced by well-seasoned new oak, plenty of fruit sweetness and strong but not overwhelming tannins. Bin 707 builds up into a wonderfully complex and interesting wine. The 1970-1975, 1981,1995 and 2000 vintages were not made.

One of Penfold's big guns – indeed, Peter Gago noted that this wine sells out before any of their other reds. I must say that I found that very surprising, not because it is not a cracker wine, but it certainly has plenty of competition. And production is a similar (undisclosed) quantity to the amount that they make of Grange. 16 months in new American hogsheads. Multi-regional – Barossa, Padthaway, Coonawarra, Wrattonbully and Adelaide Hills. The colour was near black with a purple rim. It certainly has some oak notes evident. Serious concentration with a chocolate biscuit character. Also black olives, cloves, aniseed, game and tobacco leaf notes. Has very, very good length. Concentrated tannins, nice balance. A coiled, muscular wine. It has intensity that is maintained throughout that lengthy finish. Plenty of “Cabernet” character is evident though it is, of course, not at all regional. A very good future ahead. There will be no 707 from the 2011 vintage (there was none made in 2000 or 2003 either).

Deep crimson purple. Intense cassis, dark fruit, malt, toasted oak notes. Dense and elemental with exuberant dark cherries, cassis aniseed flavours, fine ripe chocolaty tannins and judiciously balanced vanilla, malt oak. A ripe juicy finish with a savoury tannin plume. Luxuriant, powerful and perfectly balanced. A landmark Bin 707 with huge cellaring potential.

Supporting a purple rim and dense black core. A pool of fruits (blue and black) unravel to reveal blueberry, mulberry, boysenberry and blackberry.

Similarly, a colourful courtier’s adornment of orals and spice disrobe to release violet, wild flowers and anise, whilst shyly lowering a veil of cassis.
Aeration liberates a coulis/compoté of candied fruits (incl. dried figs) and roasted beetroot, coated by an assortment of dusting powders.

Focus and definition—a palate continuum with no rough edges. Harmonious and luxuriant.

A glycerolic density —texturally marrow-like with squid-ink concentration—thankfully without the commensurate flavour/source. Crème de cassis effortlessly cascades from nose to palate, collecting raspberry and dark cherry fruits in passage.
An oak cacoon plied with overt ripe tannins attempts to frame the package, yet a seriously lingering flavour and tactile afertaste refuses to be curtailed.
