The Story

Bin 707 represents the Penfolds House red wine style at its most rich and powerful. The cabernet fruit is largely drawn from South Australian vineyards in Coonawarra, Padthaway, Barossa Valley – including the famed Block 42 vineyard - and increasingly from Bordertown. Everything about Bin 707 is large scale. Winemakers seek fully ripe fruit with strong flavours derived from partial barrel fermentation and maturation in new American oak hogsheads for a period of 18 months. Bin 707 is immensely concentrated with dark berry/dark chocolate fruit balanced by well-seasoned new oak, plenty of fruit sweetness and strong but not overwhelming tannins. Bin 707 builds up into a wonderfully complex and interesting wine. The 1970-1975, 1981,1995 and 2000 vintages were not made.

Wine Information

Lower than average winter rainfall was experienced across each region. Variable conditions continued through the period from October to December, merging into a mild summer, with a few short periods of elevated heat. Areas including the Coonawarra experienced cooler temperatures for flowering ahead of superior ripening conditions, with lower yields contributing to an earlier start to harvest. Across each region, fruit was picked in optimal condition. Smaller berry and bunch sizes were noticeable in most regions. Coupled with favourable weather conditions, great results were delivered for traditional quality markers – colour, tannin profile, fruit concentration and flavour depth.

Vintage 2012

Lower-than-average yields in Australia, as across much of Europe. This was blamed on high winds, drought and low fruitfulness resulting from the poor 2011 vintage. Quality, however, was much better than in the exceptionally damp 2011, with South Australia avoiding some of the weather extremes experienced by other states. Strong varietal typicality is a commonly cited feature of the 2012 crop.

Oakasaurus. Texturally this is a dynamo, ultra luscious and ultra seductive, the oak milkshake a big part of the wine. A wonderful smooth texture in there but hard to see much beyond milky oak and tannins. Tricky wine to rate, this needs loads of plus signs methinks as it is essentially undrinkable now. That texture really is remarkable though, which bumps the score up considerably. 18.4/20, 94/100++

Deep purple, with a black, impenetrable core At once 707... i.e. it would appear less 100% Cabernet Sauvignon, more 100% Bin 707! Barrel ferment notes sprint past all others – the formics, smoked nuts/meats. Soon overtaken by hoisin, sweet soy sauces and concentrated tomato paste aromatics. A final wave of liquorice, black forest cake/tiramisu and choc/coffee affogato exotics. And what of the 100% new oak? Yes, perhaps the primary source of those (repressed) nutty/toasty wafts...? Full-bodied, mouth-filling. Complex, layered. Surely not befitting the “assault of the senses” commentary overheard on a re-pour during this tasting?! A blackcurrant overlay across a base of just-baked, spiced, chocolate fondant. Tannins omnipresent, yet calmly conveyed by the wine’s lush fruits and densely textured extract. Oak totally absorbed...certainly at one with the wine.
