Rousseau's Burgundy Vintage Report: In short, 2005 promises to be a great year of aging, as generous in quantity as in quality. The period of vegetative rest which extends from October to February was marked by a slightly more rigorous and longer than previous years, with normal precipitation and exposed sunshine except in January. Pruning took place from November to March and there was no winter treatment. 'Budding' was around April 20. The renewed activity of the vines occurred towards the end of March and the beginning of April, and the relatively cool and disturbed climatic conditions were rather unfavorable to its development. At the end of April, a radical change in time caused an explosion of vegetation and the delay in maturity compared to 2004 has been completely compensated.
The drought, which began at the beginning of June, worsened throughout the month of August. Flowering, which began quickly, reached its peak from June 6 to 10. From mid-June to the end of the month, the berries expanded very quickly due to the heat, and veraison began in the first days of August.
The harvest, which began on September 14, took place in excellent conditions, with the weather as well as the quality of the grapes, which were extremely healthy, beautiful and in sufficient quantity. All these ideal conditions gave a very good harvest. Consequently, the vinification took place in good conditions and lasted 15 to 18 days. After a slight cooling of the tanks at the start of vatting (up to a temperature of 15°C), alcoholic fermentation began naturally. The maximum temperatures were relatively moderate (28°C to 33°C depending on the tanks) and did not required no intervention to control the parameters. The extraction was done very gently, with a little less intervention (punching down and pumping over) than usual. Malolactic fermentation, which started quickly, ended in April-May. The sugar level was high with better acidity compared to previous years, giving a very good balance. The first shelving was done in September 2006.
Rapport du Millésime Bourgogne de Rousseau : Bref, 2005 promet d’être une belle année de vieillissement, aussi généreuse en quantité qu’en qualité.La période de repos végétatif qui s’étend d’octobre à février a été marquée par un hiver légèrement plus rigoureux et plus long que les années précédentes, avec des précipitations normales et un ensoleillement à découvert sauf en janvier. La taille a eu lieu de novembre à mars et il n’y a pas eu de traitement hivernal. 'Débourrement' était autour du 20 avril. Le regain d’activité de la vigne s’est produit vers la fin mars et le début avril, et les conditions climatiques relativement fraîches et perturbées ont été plutôt défavorables à son développement.Fin avril, un changement radical d’heure a provoqué une explosion de végétation et le retard de maturité par rapport à 2004 a été entièrement comblé.
La sécheresse, qui a commencé début juin, s’est accentuée pendant tout le mois d’août. La floraison, engagée rapidement, a trouvé son apogée du 6 au 10. Juin. De mi-juin à la fin du mois, les baies se sont agrandies très rapidement à cause de la chaleur, et la véraison a commencé les premiers jours d’août.
Les vendanges, commencées le 14 septembre, se sont déroulées dans d’excellentes conditions, avec la météo comme avec la qualité des grappes extrêmement saines, belles et en quantité suffisante. Toutes ces conditions idéales ont donné une très belle récolte. Par conséquent, la vinification s’est faite dans de bonnes conditions et a duré de 15 à 18 jours. Après un léger refroidissement des cuves au début de la cuvaison (jusqu’à une température de 15°C), la fermentation alcoolique a commencé naturellement.Les températures maximales étaient relativement modérées (28°C à 33°C selon les réservoirs) et ne nécessitaient aucune intervention pour contrôler les paramètres. L’extraction s’est faite de manière très douce, avec un peu moins d’intervention (pigeages et remontages) que d’habitude. La fermentation malolactique, qui a commencé rapidement, s’est terminée en avrilmai. Le taux de sucre était élevé avec une meilleure acidité par rapport aux années précédentes, donnant un très bon équilibre. Le premier rayonnage a été effectué en septembre 2006.
