The Story

At the end of the 17th Century, Dom Pierre Pérignon stated his ambition to create ‘the best wine in the world’.  On 29 September 1694, Dom Pierre Pérignon wrote that his mission was to create “the best wine in the world.” He dedicated himself to improving viticulture techniques, perfecting the art blending grapes from different crus, and introduced the gentle and fractional pressing to obtain white wine from black grapes.Ever since, the House...

Wine Information

The year 1985 was exceptional in its weather conditions and allowed the grapes to open well and to be picked from 30th September in ideal conditions.

Comments of Cellar Master Dominique Foulon (Oct 1991):

On the nose: Intensely floral attack that soon gives way to characteristics of acacia honey and lightly preserved fruits.

On the palate: Lots of fullness and vinosity. Characteristcs of figs and raisins predominate then give way to n...

Vintage 1985

Severe winter temperatures and spring frosts did great damage, leaving many in the region unhopeful of a good year. The destruction was excessive especially in the northern Montagne de Reims, in the hillside vineyards west of Reims and in the Aube. The early summer weather did not raise the hopes, but finally fine September weather came to the rescue and yields ended up being better than feared (albeit tiny, 6,827 kg/ha) when picking commenced...

Written Notes

The 1985 Dom Perignon had a spinier nose than the 1988, with a touch of that honeyed maturity as well as some oat and straw aromas. Nicole observed that there was so much going on in the nose.. The wine was very well-balanced and got breadier in a sweet, cinnamon-raisin way. The body was more medium than full but still had good character although it lacked tertiary depths. This bottle was the first Oenotheque. bottling, DP’s version of RD. (93).

I was more impressed with this wine when it was launched than I am today. “Dom's” lovely coffee tones are there already, but the exhaust-fume note and mushroom aroma are toned down. The flavour is delicate and fruitily elegant, with a sophisticated smoothness and long aftertaste that remind me of toffee and oranges. The wine is now back in a shyly floral, creamy, elegant phase of its own. Super delightful.

Obviously quite old from the deep gold and the developed, biscuity nose. I thought it was from the 1980s when it was served blind. But it is still quite tangy and tense, managing to combine both richness and acidity. Not voluptuous in any way. I wonder whether it will ever relax and really open out?

The taste is corked. This wine is faulty.
