The Story

 At the end of the 17th Century, Dom Pierre Pérignon stated his ambition to create ‘the best wine in the world’.  On 29 September 1694, Dom Pierre Pérignon wrote that his mission was to create “the best wine in the world.” He dedicated himself to improving viticulture techniques, perfecting the art blending grapes from different crus, and introduced the gentle and fractional pressing to obtain white wine from black grapes.Ever since, the House of Dom Pérignon has perpetuated this visionary approach instilled by its founder, one that remains a hallmark of true luxury: the constant reinvention of the exceptional.

Under the creative leadership of cellar master Richard Geoffroy, Dom Pérignon is reinvented with every vintage. The miraculous concept of assemblage – the delicate balance between Pinot Noir and Chardonnay – and the commitment to Vintage are instrumental in the act of creation, revealing the wine's extra soul. Precise and tactile to the point of seamlessness, tense through rhythm and vibrancy, vigorous and fresh yet mature, intense and complex – such is the sensual style of Dom Pérignon: so inviting, yet so mysterious...

The core of the blend are the eight historical Grands Crus, Aÿ, Bouzy, Verzenay, Mailly, Chouilly, Cramant, Avize and Le Mesnil, plus the legendary Hautvillers Premier Cru. Dom Perignon also has the unique privilege of being able to select grapes from all 17 Grands Crus in Champagne. giving birth to Dom Perignon's highly intriguing contrast".

AN ACT OF CREATION TO REFLECT THE VISION OF DOM PÉRIGNON
It begins with a vision: Dom Pérignon’s creative ambition strives towards harmony as a source of emotion.
All creative processes have their constraints. Dom Pérignon's constraint is the vintage. Dom Pérignon can only be produced from the harvest of a single year. Dom Pérignon is one and indivisible.

Its Vintages express themselves fully into three dimensions:
The year: the character of the seasons;
The Plénitudes: evolution by successive windows of expression on the way of the long maturation on lees;
The colour: white or rosé.

Can one single glass be created to fully express the champagne across years, Plénitudes and colors? Thus guarantee the best tasting experience: on the eye, on the nose and on the palate. Dom Pérignon chose to take on this challenge with the experience of Richard Geoffroy, passing on its intangible legacy to its successor, Vincent Chaperon, and the savoir-faire of Maximilian Riedel, CEO of Riedel, and 11th generation of the family.

THE CHAMPAGNE DEFINES THE SHAPE OF THE GLASS
The Riedel glass tradition dates back to 1673 in Bohemia, but Claus Riedel, 9th generation, was the first to create purely functional glasses directly inspired by the Bauhaus movement: form follows function. Since the end of the 1950s, the company Riedel has consistently created the best possible glasses to highlight the qualities of complex wines in the nose and mouth. Today, its founding principle is that the wine alone defines the final shape of the glass, and no preconceived design or trend should intervene in its elaboration.

A TRANSCENDENT FORM FOR A HARMONIOUS EXPERIENCE
The “Dom Pérignon” glass came to life in a creative process that unfolded over the course of a year. The new glass emerged through numerous tastings and ultimately took form following critiques and refinements.

Riedel designed the “Dom Pérignon” glass to be in symbiosis with every Vintages of the House, shedding a light on the singularity of Dom Pérignon. Unfailingly true to Dom Pérignon’s vision, the new glass sets the stage for harmony by enhancing:
- Weight: substantial, yet with a certain lightness and ease, powerful but not forceful
- Flow: a tension, a “yin & yang” that enables the wine to express itself without exaggerating any dimension of its complexity
- Texture: continuous, seamless, tactile
- Finish: fruit-driven, encompassing both minerality and salinity

THE HARVEST
The year was notable for its exceptional summer : A fairly overcast spring meant that the vines flowered late but quickly. The summer compensated for the spring, with a heat wave arriving at the end of June. For two months, there was hardly any rain, just a few isolated clouds and above-normal temperatures that seat a 30 year record. The harvest began on September 18 for the Chardonnay and on September 25 for the Pinot noir grapes.

Vintage 1995

A welcome relief after some difficult years in the region. Quantity-wise, it was the seventh high-cropping year in a row. But, in 1995, the quality also excelled, and particularly so for Chardonnay. There were significant frost damages during the spring and the warm but wet weather in the summer ignited mildew and rot problems. The vines cropped heavily and rigorous vineyard work and selection during harvest led to best results. Harvest commenced on September 18th and yielded grapes of a fine balance of sugar and acidity. The vintage has turned out to be much better than first expected and it has emerged from the shadow of the much-hyped 1996. This vintage is marked by elegance of its inviting fruitiness, beautiful balance and slow-building finesse. Its greatest examples include Charles Heidsieck Blanc des Millénaires, Dom Pérignon (whole range), Louis Roederer Cristal and Cristal Rosé, Bollinger R.D, Krug Vintage and Taittinger Comtes de Champagne.

The 1995 Dom Perignon had a milder nose by comparison but was still very nice. There was a delicate freshness on the bready side with mild citrus and a quiet calm and balance to the nose. The palate was very stony and a bit more unbalanced by comparison to the 1996 in regard to the bread flavors upfront and alcohol on the finish. The 1995 was more medium-bodied but solid, and it went very well with the smoked trout, which balanced it out on the palate tremendously. The 1995 was very smooth, more ready, approachable and rounder than the 1996. Justin remarked that the 1995 was better balanced. It doesn’t have the stuffing of the 1996, but it’s more my style.. Here is a soft, charming, sensual, and classic Dom Pérignon. The wine carpets the palate with the softest silky texture you can desire. This supple, complex wine runs down your throat with the greatest ease, trailing a fresh aftertaste. The aromatic palette is the same as usual, with its exotic fruit and breakfast-y notes, as well as an unusually strong dash of vanilla that is a distinguishing feature of the vintage.

Pale yellow with green tints and very fine bubbles. Pronounced apple nose with brioche, vanilla and nougat. Crisp, medium-bodied wine with a delicate mousse, brioche and nutty nougat aromas with lychee flavours. Long mineral finish.

The brioche and honey tones quickly blend with fresh almond and apricot embellished by hints of smokiness. After the upfront intensity and roundness, there is a gradual tension which becomes persistent, vibrant, pure, mineral and fruity.

Lemon yellow, tiny bubbles, tight, lime, sharp (if subdued), flint, touch of cheese. Fresh acidity, ripe lemons, more focused than 96, something I like, elegant mousse, refreshing, lively, just a little bit short for higher marks. 94-95

Man har tillverkat endast ett fåtal Dom Pérignon White Gold i en trelitersflaska (Jéroboam) insvept i vitguldöverdrag från juvelerarhuset Chaumet. Första flaskan såldes till en restaurant i London för den finns på vinlistan för €7 500. Här är en mjuk, älskvärd, sensuell och samtidigt klassisk Dom Pérignon. Vinet tapetserar gommen med den mjukaste sidentapet man kan tänka sig. Det lena och komplexa vinet rinner ned i halsen med den största lätthet och lämnar samtidigt en frisk eftersmak efter sig. Den aromatiska färgkartan är den gamla vanliga med den exotiska frukten, de frukostartade tonerna med ett ovanligt starkt stänk av vanilj som är ett av årgångens kännetecken.
