THE HARVEST
The year was notable for its exceptional summer : A fairly overcast spring meant that the vines flowered late but quickly. The summer compensated for the spring, with a heat wave arriving at the end of June. For two months, there was hardly any rain, just a few isolated clouds and above-normal temperatures that seat a 30 year record. The harvest began on September 18 for the Chardonnay and on September 25 for the Pinot noir grapes.

A welcome relief after some difficult years in the region. Quantity-wise, it was the seventh high-cropping year in a row. But, in 1995, the quality also excelled, and particularly so for Chardonnay. The 1995 Dom Perignon had a milder nose by comparison but was still very nice. There was a delicate freshness on the bready side with mild citrus and a quiet calm and balance to the nose. The palate was very stony and a bit more unbalanced by comparison to the 1996 in regard to the bread flavors upfront and alcohol on the finish. The 1995 was more medium-bodied but solid, and it went very well with the smoked trout, which balanced it out on the palate tremendously. The 1995 was very smooth, more ready, approachable and rounder than the 1996. Justin remarked that the 1995 was better balanced. It doesn’t have the stuffing of the 1996, but it’s more my style.. Here is a soft, charming, sensual, and classic Dom Pérignon. The wine carpets the palate with the softest silky texture you can desire. This supple, complex wine runs down your throat with the greatest ease, trailing a fresh aftertaste. The aromatic palette is the same as usual, with its exotic fruit and breakfast-y notes, as well as an unusually strong dash of vanilla that is a distinguishing feature of the vintage.
The brioche and honey tones quickly blend with fresh almond and apricot embellished by hints of smokiness. After the upfront intensity and roundness, there is a gradual tension which becomes persistent, vibrant, pure, mineral and fruity.
Lemon yellow, tiny bubbles, tight, lime, sharp (if subdued), flint, touch of cheese. Fresh acidity, ripe lemons, more focused than 96, something I like, elegant mousse, refreshing, lively, just a little bit short for higher marks. 94-95
TASTINGNOTE Även Moët & Chandon har gett sig in i kategorin Champagne de Luxe. Man har tillverkat endast ett fåtal Dom Pérignon White Gold i en trelitersflaska (Jéroboam) insvept i vitguldöverdrag från juvelerarhuset Chaumet. Första flaskan såldes till en restaurant i London för den finns på vinlistan för €7 500. Här är en mjuk, älskvärd, sensuell och samtidigt klassisk Dom Pérignon. Vinet tapetserar gommen med den mjukaste sidentapet man kan tänka sig. Det lena och komplexa vinet rinner ned i halsen med den största lätthet och lämnar samtidigt en frisk eftersmak efter sig. Den aromatiska färgkartan är den gamla vanliga med den exotiska frukten, de frukostartade tonerna med ett ovanligt starkt stänk av vanilj som är ett av årgångens kännetecken.
