Another stunning Champagne, the 1975 Dom Pérignon Œnothèque (Disgorged 2007) remains one of the greatest wines I have ever tasted from Dom Pérignon. This bottle is truly spectacular from the very first taste. With its expansive, soaring aromatics and bright, finely sculpted fruit, the 1975 simply has it all. Even after several hours of air, the 1975 remains breathtakingly vivid. The 1975 Œnothèque embodies the classic style of late-release Dom Pérignon in its penetrating reductive notes.

Dom Perignon Oenotheque 1975 / A gorgeous, mature Champagne that has a natural sweetness on the nose and palate - sweet biscuits, butterscotch, honeysuckle and toffee. A remarkable Champagne with a long finish that is perfect to enjoy with food - the flavours remind one of a complex, mature, white Burgundy. According to winemaker Richard Geoffroy, this vintage was one the latest harvests with grapes picked in October. There is a richness and generosity here that is not present in many other vintages from the 1970s. This 1975 Oenotheque was disgorged in 2008.
