The Story

DOM PÉRIGNON OENOTHÈQUE  / As the custodian of Dom Pérignon’s history and style, Geoffroy watches over a few samples of each vintage in his OEnothèque, the Chef de Cave’s wine cellar. In the OEnothèque, the wine continues to mature for years and even decades, and is reborn with each metamorphosis of time, for Dom Pérignon is unanimously recognized for its impressive aging potential. As Geoffroy puts it, “Dom Pérignon OEnothèque is the ultimate...

Written Notes

adly, the 1966 Dom Pérignon Œnothèque is corked. There is, in my opinion, no reason why an Œnothèque series Dom Pérignon should be flawed in any way. At disgorgement, all of the bottles are supposedly tasted one by one. Any wines that were corked at their original bottling should be theoretically discarded at this point. The small production of the Œnothèques should make it possible to control each and every cork before the wines are re-corked and finished for shipping. Given the cost of these Champagnes, especially in recent years, corked Œnothèques are simply unacceptable.

The nose initially reveals roasted, peaty notes, leading to aromas of dried apricots, and finally a hint of fresh almonds and orange blossom. The wine is dense, pure and as polished and rounded as a smooth pebble. Sensations follow on naturally from one to another. Although the wine introduced a notion of classic balance, the deep, green aromas of privet gradually give way to a long and surprisingly sharp, fruit finish.

This is a golden hued Champagne with an array of bottle aged characters - biscuits, toast and blanched almonds. A lovely, mature Champagne with a floral note in the finish. The bubbles have subsided and drinking this wine is like enjoying a 30 year old white Burgundy - fine and lacy with silky texture. This wine was re-released in 2004.
