The Story

At the end of the 17th Century, Dom Pierre Pérignon stated his ambition to create ‘the best wine in the world’.  On 29 September 1694, Dom Pierre Pérignon wrote that his mission was to create “the best wine in the world.” He dedicated himself to improving viticulture techniques, perfecting the art blending grapes from different crus, and introduced the gentle and fractional pressing to obtain white wine from black grapes.Ever since, the House...

CHAMPAGNE: From this year, the most classic and refined champagnes were producedChampagnes are long-lived and mature slowly to their peak.

Winter and spring were fairly mild. Inflorescences began in good weather in June. Already during the next month, the cloud masses swarmed to the Champagne province. Finally, the sky broke right before harvest. The harvest remained smaller than in the previous year. Even though the weather was unstable,...

Written Notes

The 88 had a sexier, muskier nose with forward bread components and a glazed sweetness in a honeyed, toffee style. There was a peanutty side to its musk, Thai style. Given the small age difference between the 1988 and 1990, the 1988 seemed a lot more mature than the 1990. The palate had a great bread, nut and honey three-way happening, which led me to think how a sexy nose should always lead to a three-way on the palate. The palate was actually brawnier than I expected, with a very bready finish. Dan liked its overripe, Bacchanalean fruit.. (94).

Dom Pérignon is probably the world's most famous Champagne, and the '88 is an outstanding example of how beautiful this wine can be. Its notes are pure, like a brilliant diamond, and the nose is very fine. Toast, coffee beans, and fresh orangey fruit come to mind. The taste is also brilliant with clear, sharp, uplifting aromas of fruit and nuts. An ultra-sophisticated, rather light Dom Pérignon.

I’ve written elsewhere about what I think of the magnificent 1988 vintage in Champagne and Dom was/is one of the very best. Always has been. I’ve never quite found out the details but there seemed to be a very large number of '88 magnums of Dom released into Brisbane. The Thursday lunch group, mentioned in the Mates article, have had it appear on numerous occasions, though not for quite a few years. It was great to see it again and it was as good, if not better, than ever. For those that like mature champagne, this really is about at peak now. Layered, complex and mature. Finely balanced, wonderfully refined. Bright acidity. Hints of cream and quince, citrus, dry honey and ginger. Fresh and clean, wonderfully refreshing. Great length. A magnificent champagne, sheer class!

Golden, tiny bubbles, smoky, yeast, orange marmalade over fresh apples, flinty and minerals. Fresh and high acidity, elegant mousse, perfect balance, very long. 96
